Healthy Spiced chicken
This lightly spiced chicken is quick and easy. I like to marinate my chicken most of the day, however I have also made this with no time for that and it’s still delicious. Steam baking like this is so healthy and leaves the chicken moist!
Method- cut 2 Fr chicken fillets into pieces, place on baking dish, add 1 chopped onion, 1 handful coriander, few cherry tomatoes (cut a x at the bottom) a light sprinkle of cumin powder, onion powder, chilli powder and Thai spice blend. Add 2-3 table spoons of chicken stock, cover with alfoil and bake in the oven at 180C for approx 30min or until cooked. I serve this with steamed broccoli and bok choy, you can pour the juice from baking dish over the top when serving! Enjoy
