Medicinal Green soup recipe
This nutritious alkalising green soup is tasty and easy to make. I created this recipe as food medicine to give the body a hit of nutrients and provide a nourishing effect to the digestive system and Liver. This soup is rich in chlorophyll, betacarotene, B Vitamins and has anti-inflammatory properties, its also great for the immune system. This is one of my favourite soups, I instantly feel my body soaking up the nutrients. Enjoy!
1-2 litre of chicken or veg stock.
bunch of organic kale
bunch of organic spinach or silver beet remove leaves from stems
bunch of organic broccoli
2-3 stalks of celery
1 bunch fresh parsley
small bunch or coriander
2 cloves of garlic about the same size of fresh ginger.
Method- in a pot heat olive oil, lightly fry for a few minutes the chopped leek, celery, garlic and ginger.
Remove leaves of the kale and spinach by cutting away from the stalks ( do not use the stalks) wash leaves well, chop leaves, broccoli, zucchini add to pot and stir. Add the stock, parsley and coriander and add some extra water if needed to just cover the greens, be careful not to add to much water you want the soup to be thick.. Bring to the boil and then simmer for approx 15 minutes, then add the juice of 1 lemon, and blend well until a smooth consistency.
Nourish your body and enjoy! if you feel the need, garnish options are- fresh coriander leaves, sprinkle of feta, or cottage cheese, dash of natural yoghurt or coconut cream.
