Antioxidant Pineapple Salad~ clean eating


I created this clean eating salad from what I had left on the fridge, my experiment turned out awesome, a blend of savoury and sweet to get the taste buds going. Will serve approx 4 or keep in the fridge for 2 days

1.5 cup of fresh chopped pineapple

1 cup chopped red capsicum

1 cup chopped yellow capsicum

1 cup of chopped cucumber skin on

8 cherry tomatoes cut in half

1 cup of cashews chopped loosely

1/4 cup of fresh coriander

drizzle of olive oil

Throw in a bowl and your done
