I recently created a new soup that has been on repeat in our household. A delicious greek inspired soup that has a huge clean eating stamp of approval. Preparation and cooking time is approx 20minutes.
1 can of Cannellini beans, strain and rinse
1 can of Butter beans, strain and rinse
1 cup of frozen peas thawed
1 litre of stock, chicken or veg
3-4 cloves garlic
1 bunch of parsley
2 celery stalks
Handful of baby spinach
Chop all vegetables
Heat small amount of olive oil in big pot, add leek, garlic, carrot and celery stir for 2-3 mins
Add the litre of stock and water bring to boil then simmer for 5-6 min until veg is soft
Next add the peas, fresh parsley, baby spinach, juice of 2 lemons, approx 1 tsp dried dill or you can use fresh, add both beans and simmer for another 4 mins.
Now it's ready to serve and enjoy!
